Trans fat (also known as trans
fatty acids) is a specific type of fat formed when liquid
oils are subjected to hydrogenation process to convert them
into solid fats like shortening and hard margarine. This
is done to increase the shelf life and to improve the texture
and functional performance. Trans fats are found in foods
like cookies, crackers, some margarines, baked goods and
fried foods. However, a small amount of trans fat is found
naturally, primarily in some animal-based foods. Trans fats
tend to increase total and LDL cholesterol, and also may
decrease HDL (good) cholesterol.
